Cardinal Bistro opened it's doors in July of 2016 as the idea of Thomas Brennan and son Michael Brennan. Shortly after opening, Cardinal Bistro celebrated much success in the first summer season following a review in the Philadelphia inquirer by Craig Laban. Cardinal Bistro focuses on local, sustainable cuisine drawing from french technique and worldly flavors.
Behind the name "Cardinal"
The name "Cardinal" comes from Anne Brennan, Thomas's Mother and Michael's Grandmother. The Cardinal was her favorite bird, surrounding herself with statues and pictures throughout her house and garden. In late 2006 Anne was diagnosed with cancer, months later she passed away. On the day she passed away Michael was out in her garden morning the loss of his grandmother when a Cardinal flew in to sit only feet away from him. Several more flew into gather around. Years later Thomas and Michael wanted to pay homage to Anne and decided to name their restaurant concept Cardinal Bistro. Later Thomas and Michael upon researching found out that the Cardinal is a symbol of someone watching down over you.
